Bocuse d'Or gold winner weekend
Bocuse d'Or gold medallist Brian Mark Hansen takes over The Conservatory this October. Two dinners, a guided hike, the fjord in autumn. 30 October – 1 November 2026

Autumn at Union Øye is a season of striking contrasts – snow-dusted peaks above a valley still deep in gold and amber, the fjord glassy on still days. The contrast between what is happening outside and the warmth within is part of what makes it worth being here.
The kitchen follows the season closely – shellfish at their finest, mushrooms and berries from the forest, apples from the orchards along the fjord finding their way into the kitchen. Inside, the fires are lit. A long bath with the sound of the wind outside, a drink by the fire, a book in the living room. Autumn at Union Øye moves at its own pace.
Offers and packages

Complementary third night in March and April, October and November.

Unforgettable hikes right outside your room’s window.

Union Øye has been a retreat for love stories since 1891. Surrounded by fjords and mountains, our historic hotel offers the perfect setting for a truly unforgettable romantic escape.
In autumn, the mountains around Øye are at their most dramatic – the peaks sharp and clear above a valley turning gold, the trails quiet, and the light extraordinary at this time of year.
Slogen rises directly above the village, visible through the glass ceiling of the Conservatory. The trail begins just outside the hotel, with the Patchell cabin as a natural stop along the way. A short drive along the fjord to Urke opens up several more routes: Saksa, Egilbu, and the Urkeegga ridge. We are happy to share our favourite routes and personal tips. For a full day in the mountains, we can also prepare a packed lunch – just ask.
