The Conservatory is Union Øye's gastronomic restaurant – where classical technique, local ingredients, and inspiration come together. The room looks out over the kitchen garden and the courtyard on one side, and to the peaks and the fjord on the other, with Mount Slogen rising above the glass ceiling.

Dinner at the Conservatory is a composed experience — a signature menu that moves through seasonal ingredients, classical technique, and the flavours of Sunnmøre. Served Friday and Saturday in low season, and Tuesday to Saturday from May to September.

The occasion invites you to swap the hiking boots for something a little more dressed up – we recommend smart casual dress for the evening.
